Scott DesMarais of Foley, claims to have been cooking Barbeque for 40 years.
He started cooking for himself and his family, but soon, word got out. He began doing graduation parties, birthdays, and hosted an annual cook-out for friends and family. One of those friends was Joan Bradshaw. Scott says she was his inspiration for starting a catering business and purchasing a food truck.
Bradshaws picture hangs in the food truck that he and his son Steve operate. She passed away in 2011 in a car accident in Wisconsin.
“She always told me I should take my barbeque to the next level,” Scott said,
That’s just what he did when he started Heavenly Hog Roasting and began catering events. Four years ago, he bought his food truck.
DesMarais caters to events all around Central Minnesota, but he’s open to going further. He mentioned going to Browerville for their annual tractor pull. He’s kept his food truck busy. This summer has been filled with events around the St. Cloud and Sauk Rapids area. He stays close to home too.
DesMarais recently was at the Foley Hardware Store serving pulled pork, pork chops, mac and cheese, and mini donuts. He mentioned that mini donuts are strictly a food truck item and not available for catered events. Steve and Scott don’t normally bring the food truck to catering events.
Heavenly Hog Roasting came to the Patriot’s attention because of a review submitted to the newspaper from a satisfied customer.
Christina Keiderling, who described herself as a Sherburne County bride wrote, “Scott and Steve DesMarais of Heavenly Hog Roasting in Foley, provided luscious pulled pork and juicy pork chops, along with sides of baked beans, macaroni and cheese, and coleslaw (at a wedding event).”
“For what came out to about $20 a person (a steal in the wedding world) my guests were just blown away,” she continued. “Pork chops are risky as they so often come out dry - but not Scott’s!
Keiderling says the chops were large and while trimmed retained the perfect amount of fat.
“The seasoning and caramelization was crowd pleasing, and the servings were generous,” she said. “Scott and Steve were so friendly and accommodating, continuously jumping up to serve people as guests came back up time and time again hours after the dinner service had started. I even had people ask me if Scott and Steve were relatives because they were so fun and pleasant!”
Scott remembered doing the event and expressed how much he enjoyed the people who were in attendance. Keiderling chose Heavenly Hog Roasting because it was important for her to work with a local business. She wasn’t disappointed. She said they were amazing.
That opinion was shared by readers of the St. Cloud Times. Heavenly Hog was voted Best Food Truck in 2022. If you go to their Facebook page, you’ll find similar glowing reviews. They often update their page to tell followers where their food truck will be throughout the week.
