Cake, meat balls and a hot dish! Enjoy!

Poor Man’s Cake

• 1-1/2 cups flour;

• 1/2 teaspoon salt;

• 1 egg;

• 1 cup sugar;

• 1 teaspoon soda;

• 1 small can fruit cocktail.

Mix and bake for 45 minutes at 350º. Use a nine-inch square pan.

HOT CARAMEL SAUCE

• 1 cup cream;

• 1/2 cup sugar;

• 1/2 cup brown sugar;

• 1/2 cup butter.

Mix and boil for five minutes. Serve cake with hot caramel sauce.

Meat Balls & Sauerkraut With Dumplings

• 2 pounds ground beef;

• 1/2 teaspoon pepper;

• 1 egg;

• 1 tablespoon salt;

• 1 small onion;

• 1/2 cup rice;

• 1 teaspoon paprika.

Mix together in order given. Form a ball the size of a golf ball. Place in a three, or four-quart kettle, in which sauerkraut has been placed at the bottom. Then, place a row of meatballs. Pour enough water to cover. Simmer on top of stove for 40-45 minutes.

DUMPLINGS

Mix together 1/2 cup milk, 1 cup flour and 1 teaspoon baking powder. Let set for 1/2 hour. Drop by spoonful over sauerkraut and meat balls. Cook for 10 minutes without removing cover. You can also make Bisquick dumplings, if you prefer.

Terri’s Hot Dish

• 1-1/2 pounds ground beef;

• 1 small onion, chopped;

• 1/2 cups celery, chopped;

• 1/4 tablespoon chili powder;

• 1 can cheddar cheese soup;

• 1/4 package Mozarella cheese or whatever cheese is desired;

• 1 can mushrooms;

• Salt and pepper, as needed;

• 1-8oz. package of noodles;

• Dash of garlic powder;

• 1 can tomato soup.

Fry ground beef, brown with onion, celery and seasonings. Add cheddar cheese soup and mushrooms; simmer for 20 minutes to 1/2 hour. Cook noodles; drain and add. Simmer more. Add Mozzarella cheese until melted; stir. This hot dish does not have to be baked.
