3 new foods selected for State Fair

Minnesota Farmers Union (MFU) is thrilled to announce that three of its new fair foods were selected for the coveted 2025 Minnesota State Fair New Fair Foods List.

 The Bison Meatball Sub, created by Chef Dave Buxton, and the Apple Glaze and Banana S’more created by Chef John Kraus of Patisserie 46, are among the more than 30 items on this year’s new fair foods list.

Minnesota Farmers Union showcases local foods at its MFU Coffee Shop at 1635 Dan Patch Ave. on the Minnesota State Fairgrounds. The Coffee Shop is managed by Farmers Kitchen + Bar, an MFU-owned farmer-to-table restaurant in downtown Minneapolis. MFU partners with other food artisans, including Earl Giles and J & S Bean Factory, to bring high-quality products to the Minnesota State Fair.

“At MFU, we take pride in supporting farmers and rural communities,” said MFU President Gary Wertish. “Each year, we strive to showcase different foods grown in Minnesota at the state fair.”

The Bison Meatball Sub includes bison and bacon meatballs made with Minnesota wild rice served with bison gravy, quick-pickled cucumbers, crispy fried onions and sour cream on a toasted wild rice hoagie.

 The two Patisserie sweets are exclusive creations by Chef Kraus. The Apple Glaze features pull-apart doughnut dough baked with Minnesota-grown Honeycrisp apples and topped with brown sugar pecan streusel and orange blossom maple glaze. The Banana S’more is a twist on a traditional s’more with brown-butter crumb cake, bananas, marshmallows and chocolate chunks topped with graham cracker streusel.

Minnesota Farmers Union has had a presence at the Minnesota State Fair since 1953, with a building on the corner of Dan Patch Avenue and Cosgrove Street. It became the Farmers Union Coffee Shop in 2003.

The 2025 Minnesota State Fair is Aug. 21-Sept. 1 at the Minnesota State Fairgrounds.
